Bakeries consume large amounts of flour in order to make the delicious-tasting products everyone loves. Most of them don’t use the all-purpose flour we bake with at home though. Another reason why cake flour works well is that it doesn’t have very much starch in it. Generally speaking, though you won’t get very good results to make something thick such as gravy out of cake flour. There is a very high amount of carbohydrates found in cake flour though. Those that need to be watching their weight need to be aware of this. This is also another reason why consuming too many items from a bakery isn’t healthy for you. 

You will find that cake flour is more expensive than all-purpose flour. Some grocery stores will sell it in the aisle with the baking supplies but not all of them will. You may have to search around town at a couple of different stores in order to get what you are looking for. You can also ask for a particular grocery store to order cake flour for you. Most of them will do what they can to get it for you.
